I thoroughly enjoyed my conversation with Raw Chef Dan of Quintessence in NYC and Steve Dickman from High Country Kombucha. We got deep into the story behind Kombucha, how it is made, and what it is good for, and we also heard about Steve’s early years of raw and his initial discovery of Kombucha. Dan shared about how Quintessence got started, and how things have been going in the exciting raw vegan restaurant business in New York City.
