Raw Chocolate Brownies A Hit Last Night

Everybody LOVED my raw chocolate brownies last night, so much so I though I’d ought to share the recipe with you.  4 cups raw cashews, 2 cups cacao powder, 1.5 cups raw honey, 1 tsp. sea salt, 1 tsp. vanilla, 1 cup coconut butter (the creamy, thick stuff, not the oil). Process CASHEWS + CACAO POWDER + SALT in food processor until as fine as possible. Add other ingredients and process until bunched together nicely. Check for sweetness and add more Raw Honey as desired. If it is too crumbly, start with 1/4 cup of water. You want it to be as stiff as possible without being crumbly.

Spread 1 tbs. coconut oil onto the bottom of a square or rectangular pan. Sprinkle 1 cup of sesame seeds evenly over the bottom of the pan. press the batter firmly and evenly into the pan until the pan is filled and the thickness is even. You can pat more cacao powder onto the top, or shredded coconut, or more sesame seeds, to make a ‘seal’ for any moisture and oil from the brownies. Stick them in the fridge to set up for a while if you have time. Cut into nice sized squares and serve.

    Cashews are never really raw and hardly ever fair trade. People in South East Asia are losing fingers and dying from lung disease because of their living conditions when preparing (heat included) cashews. When they strip them of their skins a strong corrosive acid damages their fingers and lungs. Often these workers are chidren. http://www.fairfood.org/facts/production-chains/cashew/
